Mom's Magic Foil Packet Potatoes

This one is easy, low-fuss, and very Memorial Day cookout coded. The butter plays beautifully with the earthy spice blend, while the lemon keeps it from feeling heavy.
What you'll need:
1.5 pounds baby potatoes, halved or quartered if large (honey gold baby potatoes are my favorite)
2-3 tablespoons Mom’s Magic Spice Blend
2 tablespoons olive oil
2 tablespoons melted butter
1 tablespoon lemon juice
How to make it:
Preheat the grill to medium heat.
In a large bowl, toss the potatoes with olive oil, melted butter, lemon juice, and Mom’s Magic Spice Blend until well coated.
Place the potatoes on a large sheet of heavy-duty foil and fold into a tightly sealed packet.
Place the foil packet on the grill, close the hood, and cook for 25 to 30 minutes, flipping once halfway through, until the potatoes are tender.
Carefully open the packet, taste, and add salt if needed.
Grill the potatoes uncovered for 3 to 5 more minutes if you’d like a little extra char on the edges.
Transfer to a serving dish and sprinkle with a little extra Mom’s Magic Spice Blend just before serving.
