Kale Greens & Garlic

Cooking Time: 30 minutes
Serves: 4

3 Tbsp extra light olive oilz
3 large garlic bulbs peeled & thinly sliced
1/2 tsp cumin seeds
3 dried red chilies chopped (optional)
1½ Tbsp Mom's Magic Spice Blend
1 lb. prewashed kale greens, stemmed
and finely chopped
1/4 cup water
1 tsp salt or to taste

  1. In a large saucepan, heat the oil. Add garlic and cumin seeds, sauté for about 5 to 7 minutes until the garlic turns golden. Add red chilies and the spice blend. Stir on a low flame for a minute.

  2. Add the kale greens in batches, allowing each batch to cook down enough before adding the next batch. Once all the kale is added to the saucepan, sprinkle 1/4 cup water, cover the lid and cook on a medium flame. Stir occasionally, until the kale is cooked through (should be tender and not bitter).

  3. Add salt and mix well. Serve with quinoa or rice.

Note: Add grilled chicken or tofu for protein.
