Red Lentil Soup

Cooking Time: 35 minutes

Serves: 4


4 cups water

1 cup red lentils, washed and rinsed thoroughly in water

2 Tbsp Extra light olive oil

1 large sweet onion, peeled and diced

2 jalapeno peppers, stemmed and finely chopped

3 medium tomatoes, stemmed and finely chopped

1 Tbsp lime juice

2 Tbsp Mom's Magic Spice Blend

1 tsp salt or salt to taste

1/2 tsp raw brown sugar (optional)


Heat water in a pot, add lentils and cook for 25 minutes or until the lentils are tender (soft to touch). Turn off heat.

In a small saucepan, heat the oil and sauté onion and peppers on a medium flame until onions are light golden brown.

Add tomatoes, lime juice, spice blend, salt and mix well.  Transfer mixture to the pot with cooked lentils and simmer for 10 minutes, until the flavors are well blended.  Serve hot in soup bowls.
