1 pound large shrimp, peeled and deveined
2 Tbsp olive oil
1-2 Tbsp Mom's Magic Spice Blend, depending on how strong you want the flavor
Juice of 1 lemon, plus extra wedges for serving
2 cloves garlic, minced
Salt and pepper, to taste
Fresh cilantro or parsley, chopped (for garnish)
Preheat the Grill: Heat your grill to medium-high heat.
Marinate the Shrimp: In a large bowl, combine olive oil, spice blend, lemon juice, garlic, salt, and pepper. Add the shrimp and toss to coat evenly. Let the shrimp marinate for about 15-30 minutes in the refrigerator, but not much longer to avoid the lemon juice cooking the shrimp.
Grill the Shrimp: Thread the shrimp onto skewers (if using wooden skewers, soak them in water for at least 20 minutes beforehand to prevent burning). Grill the shrimp for 2-3 minutes on each side or until they are pink and cooked through.
Serve: Remove the shrimp from the skewers and place them on a serving platter. Garnish with chopped cilantro or parsley and serve with lemon wedges on the side.

· Over Rice: Serve the grilled shrimp over a bed of fluffy jasmine or basmati rice.
