Chicken Salad

Serves: 4


2 cups cooked chicken, shredded or cubed

1/2 cup celery, diced

1/4 cup red onion, finely chopped

1/4 cup raisins or dried cranberries for a touch of sweetness

1/4 cup almonds or cashews, chopped

1 apple, diced (optional for a crunchy, fresh element)

1/2 cup Greek yogurt or mayonnaise, depending on your preference

1-2 Tbsp Mom's Magic Spice Blend, adjusted to taste

Juice of 1/2 lemon or lime

Salt and pepper, to taste

Fresh cilantro or parsley, chopped (for garnish)


Combine Ingredients: In a large bowl, mix the chicken, celery, red onion, raisins, nuts, and apple.

Make the Dressing: In a separate bowl, whisk together the Greek yogurt or mayonnaise, spice blend, and lemon or lime juice. Taste and adjust the seasoning with salt, pepper, and more spice blend if needed.

Mix the Salad: Pour the dressing over the chicken mixture and stir until everything is well coated. If the salad seems a little dry, you can add more yogurt or mayo.

Chill and Serve: Allow the salad to chill in the refrigerator for at least an hour to let the flavors meld. Serve chilled, garnished with fresh herbs.
