Bell Pepper Pilaf

Cooking Time: 30 minutes

Serves: 4


1 cup Basmati Rice, cook according to package directions

2 Tbsp Extra Light Olive Oil

1 large sweet onion, peeled, quartered, thinly sliced

3 bell peppers (red, yellow and green), stemmed, seeded, quartered and thinly sliced

1/2 tsp red chili powder (optional)

1 Tbsp Mom's Magic Spice Blend

1 Tbsp lime juice

1/2 salt or salt to taste


Begin cooking rice using your preferred method.

While the rice is cooking, heat the oil in a large sauté pan. Over medium heat, add onions and bell peppers, and sauté for 5 to 7 minutes until the onions turn lightly golden brown.

Add the spice blend, red chili powder, lime juice and salt. Stir until well mixed.

Reduce the heat to low, add cooked rice and mix well. Cook for 3 minutes.

Garnish with cilantro and serve.
